Primal Breakfast Casserole (www.marksdailyapple.com)

1 lb. Ground breakfast sausage or other ground meat

3 turnips, peeled and grated – food processor works (substitute 1 medium sweet potato if needed)

8 beaten eggs

3 chopped scallions

Sauté sausage, breaking it up into small pieces with a spoon or spatula, until almost cooked through.

Mix the sausage with the rest of the ingredients. Spoon into a 11 x 7 baking pan.

When ready to cook, heat oven to 400 degrees. Bake for 45 minutes or until eggs are set.

    Some of my favorite mods to this recipe.

    If you need the carbs (i.e. weight loss not an issue) use grated sweet potato instead of turnip. Throw it in at the tail end of browning the meat to give a little pre-cook to them.

    Ground turkey works great.

    We cook in an 9X9 pan. Cut into 3 inch squares yields 9 pieces. Add an extra egg, and your protein calculations are much easier.

    Then dust with powdered sugar, coat in syrup, garnish with jelly beans, and you’re good to go.

    (I’m kidding. About the jelly beans. Gross!)
