Ground breakfast sausage or other ground meat 3 turnips, peeled and grated – food processor works (substitute 1 medium sweet potato if needed) 8 beaten eggs 3 chopped scallions Sauté sausage, breaking it up into small pieces with a spoon or spatula, until almost cooked through.
